Ingredients- 450g (1lb) of pizza dough - 200g tomatoes sauce - 100g of sliced speck - 300g of butter squash pumpkin - black olives - arugula - oregano

Cut the pumpkin in small pieces and put them in a oven pan with some olive oil. Cook them for about 45 min in the oven at 180°C (370F). |
Leave the dough covered in a bowl for at least 4-5 hours to rise. In a round oven tray put some flour and lay the dough on it. Add more flour if the dough is too wet. With your hands make it flat following the movements in the pictures. |
Hold the left side of the dough with your left hand, and pull it outward with your right hand in a circular motion, rotating clockwise after each time. Repeat this movement among the perimeter of the circle. Never try to streach the center. |
Once the dough is about the same size of the tray pour the olive oil and the tomato sauce on the dough, paying attention to spread them on the crust. |
Spread the tomatoes sauce and the oil on top of the dough. Add the pumpkin pieces and cook in the oven 200°C (390F) for 15 min. |
In the meanwhile prepare the arugula. Wash it and chop the leaves. |
After 15 min of cooking take out the pizza from the oven and add: black olives, mozzarella sliced. |
And oregano. Cook in the oven 190°C (390F) for other 15 min. |
When the crust is well tanned take out the pizza from the oven and until it is really hot add the speck. In this way the speck will melt on the pizza. |
Just before serving add the argula and enjoy! Serve warm. |
