Fish soup stock
Dashi, or Bonito fish soup stock, is used as a base for almost all Japanese soups, broths, stews, hot pot, and soup noodles. Dashi is the most important flavor of Japanese food.

Olive Oil
There are several kinds of olive oil. We usually use Extra Vergin Olive Oil for most of the recipes, especially the ones in the European section. You can feel the difference between Extra Vergin olive oil and a regular olive oil especially if you need it raw and not for cooking. Feel free to use the one you have at home.

Japanese Sake
Sake is an alcoholic beverage of Japanese origin that is made from fermented rice. In the Japanese store you can find also the Sake "for cooking" that is perfect to use in the recipes and not to drink. If you don't find the Sake you can use white wine instead.

Sesame Seed Oil
Sesame oil is an edible vegetable oil derived from sesame seeds. Besides being used as a cooking oil in South India, it is often used as a flavor enhancer in Chinese, Japanese, Korean, and to a lesser extent Southeast Asian cuisine.

Soup stock
The soup stock can be made by chicken, beef or vegetables. You can choose the one you like most and use it in our recipes. Also you can find the soup stock in different ways: cubes, powder or like a sauce. Always add it little by little and according to your taste.

Tomato Sauce
The tomato sauce we use in our recipes is usually selt in cans. It's made just by tomatoes and water. It's not a pre-made tomato sauce with herbs. It's not a concentrete.

Tomato Paste
Tomato paste is a thick concentrate sauce. Tomato paste can be the basis for making ketchup or tomato juice. You can use also this instead of the tomato sauce, remember to add enough water to obtain a sauce from the concentrate.
