Cheese Polenta with Lentils and Mushroom

Ingredients

- Polenta (look the recipe here)

- 300g of cooked lentils

- 150 g of fresh mushrooms (ciemini, shiitake, porcini)

- 1 can tomato sauce

- half onion/1 shallot

- vegetable soup stock

- boiling water

- salt and pepper

- 2 tablespoons olive oil

- 200g of brie cheese

Start to make the polenta. (look the recipe here)
When the half way cooked start to make the lentils. In a pan sweat the diced onion with 2 tablespoons of olive oil. Chop the mushrooms and add them in the pan.

Once they start to become soft add the lentils and stir.

Add the tomato sauce and boiling water (about 1 or 2 cups). Season with soup stock.

Add salt and pepper to taste. Mix and let it cook for 5 to 10 minutes at low heat, until the tomato sauce becomes dense.

Once the polenta is ready, slice the brie. Serve making a layer of polenta, place some slices of brie in the middle,

Cover it with another layer of polenta (so it will melt nicely) and finish on top with some lentils. Serve warm.
