Ingredients- Polenta (look the recipe here) - 300g of cooked lentils - 150 g of fresh mushrooms (ciemini, shiitake, porcini) - 1 can tomato sauce - half onion/1 shallot - vegetable soup stock - boiling water - salt and pepper - 2 tablespoons olive oil - 200g of brie cheese

Start to make the polenta. (look the recipe here) |
Once they start to become soft add the lentils and stir. |
Add the tomato sauce and boiling water (about 1 or 2 cups). Season with soup stock. |
Add salt and pepper to taste. Mix and let it cook for 5 to 10 minutes at low heat, until the tomato sauce becomes dense. |
Once the polenta is ready, slice the brie. Serve making a layer of polenta, place some slices of brie in the middle, |
Cover it with another layer of polenta (so it will melt nicely) and finish on top with some lentils. Serve warm. |
