Ingredients

For the meat:

- 600 g ground beef

- 3 tablespoons bread crumbs

- Italian parsley

- 1 egg

- half onion, diced

- 50g of mushrooms

- 50g of prmesan, gratered

- fresh ginger

- salt and pepper

Sauce:

- 2 cans of tomato sauce

- 1 onion, finely chopped

- 1 carrot, diced

- boiling water as needed

- oregano

- salt

Make the meat mixture: in a bowl mix the ground beef with the diced onion and the Italian parsley

Chop the mushrooms and grater the parmesan. Add them in the bowl.

Add 1 egg, 3 tablespoons of bread crumbs and salt and pepper to taste.

Mix everything with your hand until it become an homogeneous mixture. Add the fresh ginger if you like. Mix well again. Let the mixture rest for 20 to 30 min in the refrigerator.

In the meanwhile make the sauce. Dice an onion and let it sweat in a pan with some olive oil. In a food processor mash the carrot and add it into the pan. Stir until the vegetables are soft.

Add oregano and stir. Add the tomato sauce.

If too dense add some boiling water with soup stock. Let the sauce simmer for 10 minutes.

Start to make balls with the meat mixture. (If the mixture is too soft, add bread crumbs)
We made pretty small meatballs, aproximately 1 full tablespoon of meat for each, but you can choose the size you like the most. Adjust the cooking time to be sure they are well cooked before to serve them. Small balls are nicer to see in the plate than big ones, especially if you serve the meatballs on top of mashed potatoes or rice.
Add gently the meatballs in the sauce, do not stir them untill they start to cook at least outside or you will brake them.

Cover the pot and let it simmer for 30 min or until the meat is cooked.
