Ingredients- 3 sweet potatoes - 2 white or yellow potatoes - 1 red onion - 2 cups of red lentils - oregano - rosemary - salt and pepper
If you like add 50g of short pasta per person

Chop the onion and fry it in a pot with some olive oil. Cut the sweet potatoes in small pieces and add them in the pot. Cut the white/yellow potatoes in small pieces and add them in the pot. Stir. |
Add the lentils and the spices: oregano, rosemary |
salt and pepper. Boil 1 liter of water and add it in the pot. |
If you like add either 1 teaspoon of vegetable soup stock or more salt. Bring the soup to the boil. |
Cook covered for about 30 min to low/med heat, or until the potatoes are cooked. Once they are cooked, smash them with a blender. |
Serve in small bowl. Serve warm. |
A good idea to make this recipe more rich (and fun for kids) is adding short pasta. Boil some water with salt. Cook the short pasta. pour out the water and add the pasta in the soup. Serve warm. |
