- 3 sweet potatoes

- 2 white or yellow potatoes

- 1 red onion

- 2 cups of red lentils

- oregano

- rosemary

- salt and pepper

 

If you like add 50g of short pasta per person

Chop the onion and fry it in a pot with some olive oil. Cut the sweet potatoes in small pieces and add them in the pot. Cut the white/yellow potatoes in small pieces and add them in the pot. Stir.

If you like add either 1 teaspoon of vegetable soup stock or more salt. Bring the soup to the boil.

Cook covered for about 30 min to low/med heat, or until the potatoes are cooked. Once they are cooked, smash them with a blender.
