Ingredients- 1 kg red/white onions or leak - 2 tablespoons olive oil - 30 g butter - 2-3 sprigs of thyme / 1 tablespoon of dried thyme - 1/2 cup dry white wine - 2 tablespoons flour - Salt, black pepper - 6 cups chicken stock |
Slice the different onions / leak and put them in a pot with spices: thyme and laurel. |
Cover the pot and cook for 20 minutes on low-med flame with olive oil and butter mixing from time to time. |
Increase to high heat and fry for 5 min mixing until caramelized brown. Add white wine and cook for 2 min more. |
Add flour mix. Add chicken stock and cook for 20 min. |
Serve with parmesan or Swiss cheese. Serve hot. |
