Ingredients

In the minestrone you can put the

vegetables you like, in this one we used:

- 1 onion

- 2 sweet potatoes

- 3 celery stems

- 2 carrots

- few broccoli

- green beans

- peas

- 1 zucchini

- some red lentils

- 50g of short pasta per person

- rosemary, oregano, salt, pepper

Warm some oilve oil in a pot, chop the onion, and add it into the pot. Chop the celery and it to the pot. Stir so they will start to cook. Cut the sweet potatoes and add them in the pot.

Cut the carrots, the broccoli and the green beans and add them in the pot. Stir constantly.

Chop the zucchini and add it with the peas and the lentils.

Add the spices and if you like, some vegetable soup powder for broth (or salt).
