IngredientsIn the minestrone you can put the vegetables you like, in this one we used: - 1 onion - 2 sweet potatoes - 3 celery stems - 2 carrots - few broccoli - green beans - peas - 1 zucchini - some red lentils - 50g of short pasta per person - rosemary, oregano, salt, pepper |
Warm some oilve oil in a pot, chop the onion, and add it into the pot. Chop the celery and it to the pot. Stir so they will start to cook. Cut the sweet potatoes and add them in the pot. |
Cut the carrots, the broccoli and the green beans and add them in the pot. Stir constantly. |
Chop the zucchini and add it with the peas and the lentils. |
Add the spices and if you like, some vegetable soup powder for broth (or salt). |
Cook stiring for few min more. |
Boil 500ml of water and add it in the pot. When the water starts to boil again in the pot cover with the lid. |
Cook for 30 min, or until the veggies are cooked. With an immersion blender, blend the vegetables until it is creamy. |
Boil the cream. Choose a short pasta, and cook until "al-dente" and add it in the pot of boiling cream. You can cook the dry pasta in the cream if you like, but it takes longer. |
Make the crostini: cut in small pieces some slices of bread. Put them in a oven tray with roesemary and olive oil. Broil it in the oven. |
Serve warm, add fresh olive oil on the top and the crostini, enjoy! |
