Chicken soup is not only a simple and home-made rmedy for cold and flu but also it's great and tasty soup to eat everyday. You can also add noodles or rice to make it a compleate meal.
IngredientsTo make the broth:- 3 chicken drumsticks and 1 chicken thigh (you can mix other pieces of chicken, if you have an entire chicken even better, cut it in 6-8 pieces) - 1 onion - 3 carrots - 2 stalks of celery - 2 garlic cloves - bay leaves - parsley For the soup:- 2 zucchini - 150g of butternut squash - 2 carrots - 1 onion - half savoy cabbage - salt and pepper - olive oil |
Pour 2l of cold water in a big pot and place the chicken in it, start to warm it up at low heat. Clean and peel onion, carrots and garlic cloves. |
Add the onion cut in half, the carrots, the celery, the garlic cloves and the bay leaves in the pot. |
Add parsley leaves and cover the pot. Cook for 2 hours, stirring from time to time. |
Strain the vegetables and the chicken saving the broth. |
Dice the onion and sweat it with garlic cloves and 2 spoons of olive oil in a pot. Chop the butternut squash and the carrots |
Add them in the pot stirring. Chop the zucchini and add them in the pot. Add the chicken broth, it should cover the vegetables. |
Chop the cabbage and add it in the soup. Add salt and pepper to taste, if necessary you can add soupstock. Bring to boil and let it simmer covered for 20 min. |
In the meanwhile clean the chicken. Save the meat and take out the bones, the peel and the fat. Add the chicken in the pot and cook for another 10 min until the vegetables are soft. |
Serve warm. |
