Ingredients- 1.25kg sweet potato - 1 tablespoon of soy sauce - 1/2 teaspoon salt - 1 teaspoon of sugar - 1 cup flour - black pepper - oil/butter for frying Sour cream to eat with. |
Peel the sweet potatoes and cut into quartes. Steam in covered pot with very little water for about 45min until very soft. |
Place in a streaner for at least 2 hours to cool off and drain extra water. |
Mash the potatoes with a blender or in a food processor. Add flour, |
salt and pepper, sugar and soy sauce |
and stir just until incorporated. |
Heat oil or butter in a non-stick frying pan over medium-low heat. Place small amoutns of mixture in the pan using 2 spoons. Surface patties a little bit. |
Fry about 10 min until golden. Serve warm. |
