Peperonata is a traditional dish of Sicily, Italy. There are millions of recipes of peperonata, Federica made it in this way cause her very nice neighbor gave her a kilo of this amazing sweet green peppers :-)
Ingredients- 6-8 bell peppers (if you can find this green sweet peppers even better) - 1 big onion - 300g of tomato sauce - basil leaves - olive oil - 2 garlic cloves - salt and pepper |
Warm up 3 tablespoons of olive oil in a pan and let the garlic cloves sweat. Chop the onion and add it in the pan. |
Let the onion sweat at low heat for about 15 minutes until they get soft and traslucent. |
Meanwhile wash and chop the bell peppers, taking out all the seeds and the white parts inside. |
Add them in the pan and cook them for 20 minutes low heat covered, without adding any water. |
When they are half cooked add the tomato sauce and mix. |
Add the fresh basil leaves and |
Salt and pepper to taste. Mix gently and finish o cook for about 10 minutes. |
Taste and adjust with salt and pepper. Serve warm. |
