This recipe comes from Sicily, Italy. It's a simple but really tasty salad. If you think that making a salad with oranges doesn't make any sense, you will be really surprised to discover how great it is and how perfectly the flavours match together! We got this recipe from Ornella, Fede's mother in law, who just spent a "delicious" vacation in Sicily.
Ingredients- 8 red oranges - 1 fennel - black olives - green olives (better if spicy marinated) - 1 green onion - chili powder/paprika - olive oil and wine vinegar
|
Wash the green onion and chop it in thin slices. Leave them in a bowl with cold water for 10 min. |
Cut out the top of the fennel and slice it really thin. |
Peel the oranges, be carful to take away the white skin. Peel also the orange slices. |
Put them in a bowl. Add the black and green olives as you like. |
Add the sliced fennel. Squeeze the green onion to take out the water. |
Add the green onion in the bowl. If the olives are not too spicy you can add some chili pepper on top. Adjust the spiciness to your taste. |
Add olive oil and wine vinegar on top. |
Mix just before to serve. Serve cold. |
