Asparagus and Eggs

Cut the bottom of the asparagus. Wash them with cold water. Add the asparagus in a pot with 2cm of water on the bottom.

Cover the pot and bring the water to a boil. Steam cook the asparagus for about 30 min. Depending on the size of the asparagus, it can take longer. When the asparagus are tender, turn the heat off.

Put a bunch of asparagus in a plate. In a pan warm up 2 tablespoons of olive oil and fry the eggs without breaking the yolks.

When the white of the eggs is cooked (but the yolks are still liquid), put them on the top of the asparagus. Spread some gratered parmesan on top.

Don't forget to deep the head of the asparagus in the yolk, it's the fun part! Serve warm.
