Ingredients- asparagus - eggs - gratered parmesan

Cut the bottom of the asparagus. Wash them with cold water. Add the asparagus in a pot with 2cm of water on the bottom. |
Cover the pot and bring the water to a boil. Steam cook the asparagus for about 30 min. Depending on the size of the asparagus, it can take longer. When the asparagus are tender, turn the heat off. |
Put a bunch of asparagus in a plate. In a pan warm up 2 tablespoons of olive oil and fry the eggs without breaking the yolks. |
When the white of the eggs is cooked (but the yolks are still liquid), put them on the top of the asparagus. Spread some gratered parmesan on top. |
Don't forget to deep the head of the asparagus in the yolk, it's the fun part! Serve warm. |
