Originally, falafel is made of chick peas and deep fried. In this healthy version we use red lentils that need less soaking time. The red lentils sprout after just an hour in water! They are a very good source of protein, amino acids and iron. Just a spoonful of olive oil will make these falafels crispy and ever so yummy. No need to deep fry! Enjoy this great twist on a middle-eastern delight!
Ingredients- 1 cup red lentils (Red lentils are usually sold in split form; for sprouting you must buy whole red lentils.) - 1 large onion, chopped - 5 cloves of garlic, chopped - 2 tablespoons coarse salt - 1 tablespoon of baking powder - Lots of spices: black pepper, cumin, coriander seeds and salt to taste

Rinse the lentils well in a strainer and soak in water for 2-3 hours. Filter well. |
Put the soaked lentils in a food processor with the other ingredients and grind to a smooth mixture. |
Taste and correct the seasoning. |
In a heavy frying pan over small –medium heat, put a little olive oil and with a spoon put the mixture on the pan. Fry until brown on both sides. Serve warm with tahini and salad |
