Rosemary Focaccia

very simple recipe 30min recipe servings 4

Ingredients (for 2 focaccia)

- 600g of flour

- 7g active dry yeast

- 150ml of warm water

- 200g of potatoes

- 150ml of milk

- 2tablespoons of olive oil

- 2tablespoons of salt

- rosemary

 

- olive oil for the pan

 

Boil 2 potaoes. Melt 7g of dry yeast with 150ml of warm water. In a bowl put 600g of flour.

Mash the potatoes in the bowl and mix with the flour. Add the whater with the east and mix. Add the milk and mix.

Add 2 tablespoons of salt and 2 tablespoons of olive oil and mix.

Add rosemary and mix. Take the dough out of the bowl and knead it with your hands for about 20 min.

After 20 min shape the dough in a ball and replace it in the bowl.

Cover the bowl with a dish cloth and leave it in a warm place to gown up for at least 3 hours. Then remove the fabric.

Take the dough out of the bowl and divide it in 2 half. Make them flat with your hand or with a rolling pin.

Prepare 2 oven pans with 100ml of oilv oil on the bottom. Add the flat dough and with your fingers help it to cover the whole bottom. Flip the dough one time so both the side will be deeped in the oil. Leave the 2 pans in a warm place for 45 min to grow up again.

Put the pans in the oven 200°C (390F) to cook for 25 min. After 15 min cooking check them, if they look too dry add some extra oliv oil.
