Flamiche is a specialty of the Picardy region in the north of France. It is a sort of pie stuffed with cooked leek.
Ingredients- 1 kg Leek - 3 tablespoons of flour - 1 tablespoon of Olive oil - 30 g butter - 150 ml whipping cream - Salt, Pepper, Nutmeg - 2 sheets of puff pastry - 1 egg yolk mixed with a bit of water |
Preheat oven to 200 degrees. Cut the leeks to obtain thin pieces. |
Heat olive oil and butter in a saucepan and brown the leeks. |
Remove the saucepan from heat, add flour and mix well. Start heating again 3 minutes and stop. |
Stir in sour cream, salt, pepper and nutmeg. Let the preparation cool. |
Roll out the dough and distribute the leek mixture on top, letting 2 cm on each side. Brush the edges of the dough with the egg yolk mixed with water. |
Cut thin strips of dough in the second dough sheet and arrange the strips as shown on the picture. Brush the dough with egg yolk and bake for 30 minutes in the oven at 200°C (380F). |
