Ingredients- a dozen red fresh tomatoes (Rome tomato aregood) - Fresh basil leaves - salt and pepper |
Wash your tomatoes and make a cross cut on the peel. Brin to boil a pot of water. |
Add the tomatoes in the pot and let them simmer for few minutes just until the peel from the cut starts to open. Carefully peel them. |
Cut the tomatoes in quartes, remove the seeds and cut out the hard white part of the steam. Put the tomatoes in the pot and start to cook them at medium heat. Chop the basil and add it in the pot. Stir constantly. |
Let the tomatoes simmer for about half an hour, taste the sauce and season it with salt and pepper. |
You should get a dense tomato sauce. You can make it more smooth processing it with a food processor ot an immersion blender. Serve with your favorite pasta! |
