In Italy we have many different kinds of pesto. The most common one is the green one which you can find here but we also have other types like the zucchini's pesto or this red pesto. It's very easy and quick to prepare; the only really important thing is the quality of the ingredients which needs to be very very high.

Ingredients- 320 gr pasta - 2 lt water - 500 gr tomatoes - 120 gr ricotta cheese - 140 ml olive oil - 60 gr pinuts or almonds - 20-30 basil leaves - 100 gr fresh grated pecorino - salt and pepper |
Let's start by washing the tomatoes. Then mix the tomatoes in a mixer. |
Wash the basil and add it in the mixer. Now add the ricotta, the pinuts, the olive oil, |
the pecorino and mix well until it gets like a cream. Add salt and pepper. |
Cook the pasta: boil a pot of water, and add salt. |
Weigh the pasta and add it in the boiling water. Strain when cooked "al dente". |
Dress the pasta with the red pesto and serve it warm. |
