Thanks to Laura, we got the secret for an authentic Pesto Genovese (meaning: from Genova, Italy). Pesto is one of the most known pasta sauce in the world, it's super easy to make but you need the right basil: outside from Italy it's called Italian sweet basil.
Ingredients- two bunches of basil - 50gr of pine kernels - 100gr of pecorino (seasoned goat cheese) or Parmesan (if you can’t find pecorino) - olive oil - garlic cloves - salt |
Put the basil leaves (just the leaves!) in a mixer bowl, add the pine kernels, the chopped garlic cloves and 2 tablespoons of olive oil. |
Process everything for 1 min. Add grated cheese, salt and 2 tablespoons of olive oilve. Mix the ingredients till the sauce is creamy. |
To preserve the pesto, put it in a jar, cover it completely with olive oil and keep refrigerated! This sauce is perfect with linguine pasta or spaghetti! |
