Ingredients- 350g of short pasta - 1 cup whipping cream - 1 cauliflower - 1 cup of parmesan cheese, gratered - nutmeg - olive oil - salt and pepper |
Steam cook the cauliflower, cut it in few pieces. it should take about 20 to 30 minutes. |
Preheat the oven on broil. Bring to boil a pot of water and add salt. |
Weigh the pasta and add it in the boiling water. Strain when cooked "al dente". (it will cook a bit in the oven too, so be sure it's not overcooked) |
Meanwhile chop the cauliflower in small pieces, season it with salt and pepper. Add it to a oven pan and add the pasta when ready. |
Add some olive oil and mix. Add the whipping cream and mix again. |
Add half cup of parmesan and gently stir. Sprinkle the other half cup on top of the pasta. |
Grater some nutmeg on top and broil in the oven for about 5 minutes. |
You want to get a nice light brown crispy layer on top. Serve warm. |
