Ingredients- 180g of pappardelle (or tagliatelle, anyway egg pasta. You can make your own egg pasta looking the recipe here) - 4 roma tomatoes - fresh basil - full hand black olives - 1 shallot, diced - salt

In a small pot bring to boil some water. Make a X shape cut on the skin of your tomatoes. Once the water is simmering add the tomatoes and leave them in the pot for 30 second or so. The skin of the tomatoes close to the cut should start to open. |
Peel the tomatoes and chop them. |
Dice the shallot and swert it in a pan with 1 tablespoon of olive oil. |
Add the tomato and salt to taste. Let the sauce cook for few minutes. |
Meanwhile bring to boil a pot of water and salt it. Cook the pappardelle (or the tagliatelle). |
Strain the pasta. Diced the black olives and add them in the sauce, stir. |
Add fresh basil to the sauce. Add the pasta and stir. Serve warm. |
