Ingredients- 1 chicken breast (sliced) - 8 speck slices - 1 shallot - 1 half glass of white whine - 2 tablespoons of flours - butter or olive oil - sage leaves - toothpick

If you have a whole chicken breast, slice it in really thin slices. We prefer to slice it at home since the one is already sliced at the grocery store is too thick. The slices should be 2-3 mm thick. |
Make the scaloppini: for each chicken slice place and fix with a toothpick one speck slice and one sage leaf. Sprinkle the chicken with some flour. |
In a pot sweat the shallot (diced) with some butter or 2 tablespoons of olive oil. Add the chicken and cook both side few minutes at medium heat. |
Add salt and pepper to taste. Turn the heat to high and add half a glass of white wine and let it evaporate. |
Cook for other few minutes to be sure the chicken is cooked. Serve warm. |
