Goulash - Hungarian Beef Stew

Ingredients

- 1.5 kg beef for stew

- 0.25 cup flower

- 80g bacon cubes

- 2 onions

- 2 cloves of garlic

- 2 tomatoes

- 2 bay leaves

- 2 teaspoons of paprika

- 1 teaspoon of sugar

- 2 tablespoons of tomato paste

- 1 liter water or as needed

- 1 spoon salt or as desired

(After 1-2 hours of cooking):

- 3 carrots

- 2 large potatoes

Cut the beef into big cubes. Put the flour into a clean plastic bag and shake 10 beef cubes at a time to cover them with flour.

Remove extra flour and fry cubes in olive oil from all sides until golden. Remove from the pot and save them for later.

In the same oil, fry the bacon. Add the onions until transparent.

Add garlic, tomatoes, bay leaves.

Add paprika and sugar. Mix for one minute. Add the tomato paste and mix.

Add the meat and the water to almost cover it.

Cook for at least 1.5 hours – you can cook the Goulash for as long as 3 hours – the longer you cook the more tender the beef will be. Just make sure you have enough water.

Peel, cut in pieces the potatoes and add them in the pot.
