This recipe is originally from Rome, Italy. It's called Pollo alla Romana, and it's a tipical summer dish. It's super simple to cook but really tasty. You can add marjoram if you like it. There are several version of this recipe, some also have bacon or prosciutto.
Ingredients- 4 chicken thighs - 2 bell peppers - 4 roma tomatoes - 1 glass of white wine - 2-3 garlic cloves - salt pepper - olive oil |
In a pan warm up some olive oil with the garlic cloves. Place the chicken thighs and let them cook a little bit for 2 min each side. Then add one glass of white wine. |
Let the wine evaporate, flipping one time the chicken thighs. Add salt and pepper to taste. |
Cut the bell peppers in thin and long slices. |
Add them in the pot and cover it. Let them cook for few min. |
In the meanwhile chop the tomatoes and add them in the pan. |
Cove the pan and let the chicken cook for about 40 min, shaking the pan sometime and flipping the tights once after 20 min. |
Cook the last 5 min without covering the pan, to let the sauce becomes more dense. Serve warm. |
