We know there are several versions of the Chicken Tikka Masala, this takes ispiration from many recipes we found here and there. You can adjust the quantities of the spices according to your taste!

Ingredients

- 500g chicken breast (or boneless thighs)

Marinade sauce

- 1 cup of yogurt

- 2 garlic cloves

- 1 cm of fresh ginger (1 teaspoon ginger powder)

- salt and pepper

For the sauce

- 1/2 cup tomato paste

- 1 cup water

- 5 tomatoes

- 2 garlic cloves

- 1 cm of fresh ginger (1 teaspoon ginger powder)

- 1 teaspoon garam masala (or a pinch of: cumin, coriander, cardamom, pepper, cinnamon, ground cloves, nutmeg)

- 2 teaspoons paprika

- 1/2 cup heavy whipping cream

- olive oil and butter

Marinate the chicken first: in a bowl whisk 1 cup of yogurt until it becomes smooth. Add ginger (better the fresh one).

Add minced garlic cloves. You can put more than 2 cloves if you really like the garlic taste :-). Mix everything.

Add salt and pepper to taste and whisk again.

Cut the chicken breast (or boneless chicken thighs) in small pieces (3x3cm) and add them in the yogurt mixture.

Mix everything, cover it and marinate it for at least 1 hour in the refrigerator. (you can marinate it up to 3 hours)

To make the sauce you need more or less 30-40 minutes. Start by chopping the tomatoes and save them for later.

In a pan warm 3 tablespoons of olive oil and a piece of butter (optional).

When the butter is melted, add the garlic cloves (for a stronger taste you can also mince them or add extra ones) and the ginger (we didn't have the fresh one when i made this but of course fresh is better)

Add 1/2 cup of tomato sauce and 1 tablespoon of paprika

and 1 teaspoon of garam masala (if you don't have the garam masala you can add a pinch of this spices: cumin, coriander, cardamom, pepper, cinnamon, ground cloves, nutmeg)

Let the sauce cook for a few min.

When the sauce will start to get dense, add the chopped tomatoes and 1 cup of water.

Bring to boil and let it cook for 20 min at medium-low heat. it needs to boil all time. You might need to add some extra water if the sauce becomes too dense and dry. Stir every once in a while.

In the meanwhile, in a grill pan, cook the chicken pieces on both sides. They don't have to be completely cooked cause they will also cook in the sauce for a bit.

With an immersion blender or a food processor, process the sauce until smooth. Bring it to boil again and then add the chicken.

Mix everything and cover the pan. Cook for other 10 min or until the chicken is cooked. Then add 1/2 cup of heavy whipping cream.

Stir gently. Serve warm.
