- salmon filet

- fresh tomatoes (3 or 4)

- 1 shallot

- 20 black olives

- oregano

- 2 bay leaves (laurel)

Dice the shallot and let it sweat with 2 tablespoon of olive oil in a pan. Chop the tomatoes and add them in the pan. Add oregano and mix.

Add the salmon filet when the tomatoes start to be soft. Add th black olives, if you like you can chop them.

Cover the salmon with the bay leaves and cover the pan. Let it cook for 10 min, checking that it doesn't become dry. Depending on how much water will release the tomatoes you might have to add some water.

Flip the salmon once and let it cook another 10 min on the other side. Depending how thick is your salmond you might need more?less time. Serve warm.
