Ingredients- 4lb of octopus (once cooked the wheigh it's going to be halved) - 2 yellow potatoes - italian parsley - lemon juice - olive oil - 1 garlic colve, mashed - 2 carrots - cloves - 1 cork

Wash the octopus under cold water, then place it on a cuting board and dry it with paper towel. |
Beat the octopus for at least 10 minutes, in this way it will ramain tender after cooking. Wash it again unter cold water. Bring to boil a pot of water with peeled carrots, some cloves and the cork. |
Once the water is simmering add the octopus. Before to add it all wet the tentacles so they will curl. Let the water simmer again and cook the octopus about 15min for each lb. After the first 30 minutes start to check it with a fork to see if it is cooked. Do not overcook it or it will get chewy. |
Meanwhile the octopus is cooking steam cook the potatoes. Peel them and cut them in small pieces. Let them cool. |
Make the sauce: dice the parsley, add 2 tablespoons of olive oil, 2 tablespoons of lemon juice, a pinch of salt and pepper and if you like 1/2 smashed garlic. |
Mix everything. Once the octopus is cooked cut it in small pieces. |
Dress the octopus when it is still warm and let it cool down soaking the sauce. Add the potato and mix gently. Adjust with more sauce if necessary. |
Serve cold! |
