Another great fish recipe from Fede's mum cusine! Her husband got a lite heart attach few years ago, so she started to cook fish more often, since meat is not really welcome in his new diet, and she discovered great, easy and especially fast recipes... She is not really one of the Italian women that love to spend 6 hours in the kitchen to cook a meal, eheh...
Ingredients- 5 codfish filets - 3 yellow onions - 1 yellow potato - some flour - thyme - olive oil - salt

First, peel the onions, cut them in half and put them in a bowl full of water (it will save you a lot of tears!). Slice them really thin and put them in a pan. |
Add thyme and 2 tablespoons of olive oil and start to cook them at medium heat. |
Peel the potato and slice it in very thin slices. Dice the slicesin small pieces and add them in the pan. |
Cook covered for 30 min or until the potato is cooked and the onions are soft and sweet. Put them in a casserole. |
Squeeze the lemon and pour the lemon juice on the codfish. Wait for a few min. |
In a plate put some flour and bread the fish on both sides. |
Heat some olive oil in a pan and then add the fish. Cook it for 1 minute. |
Flip the fish and increase the heat. Add half glass of white wine. |
Shake the pan until the wine evaporates. The fish needs just few min to cook. Add the fish on top of the onions. The filets breaks pretty easily, don't worry if that happens. |
Serve hot. |
