Ingredients- about 300g of stale bread - 2 tablespoons of cocoa powder - 60g of almonds, minced - 2 apples - 1 tablespoon of brown sugar - handfull of raisin - 1 egg - 10 dry apricots - bread crumbs (to bread the cake pan)

Put the bread in a bowl and pour over some water. let the bread absorb the water and get soft. I't going to take few minutes. When the bread is soft eough to be smashed with your hands, crumble it in another bowl squeezing out the water before. |
Soak the raisin in a cup of water. Mince the almonds in a food processor. |
Squeeze the reaisin and add them in the bread bowl. Peel the appels and cut them in thin slices in the bowl. |
Add 1 tablespoon of brown sugar. Cut in small pieces the apricots and add them in the bowl. Add the cocoa powder and mix. |
Finally add the almonds and one egg and mix. |
Spread some olive oil on the bottom of your pan and bread it with bread crumbs. |
Add the cake mixture in the pan and press it to make it even. Bake in the oven at 180°C (350F) for 40 minutes until crisp on surface but still moist inside. |
Leave it in the oven open to cool. Serve cold or warm. |
