Tiramisu

Ingredients

- 3 eggs

- 70g sugar

- 200g of mascarpone (or Philadelphia light)

- 1 tablespoon of Marsala wine (Porto/Sherry)

- 6 cups of espresso coffee

- 30 savoiardi (lady fingers biscuits)

- powdered dark cocoa

 

Tiramisu' can be prepared in advance and frozen. Remove from the freezer 2 hours before serving, leaving it in the refrigerator. Serve it cold but not frozen!

Separe the white of the eggs (save them!) and the yolks. In a mixer beat the eggs with the 70g of sugar.

Mix until you have a soft cream. Add the 200g of mascarpone (or Philadelphia)

Add 1 tablespoon of Marsala wine and mix again until the cheese is well melted and you have a soft cream again.

Whip the whites of the eggs, until you have a soft foam.

Add the whites in the cheese cream, mixing slowly so the whites won't loose the foam.

Make the coffee and cold it. Put it in a flat bowl or a plate. Prepare the bottom of a pan with a this layer of cream. Wet the biscuits on both side in the coffee, NOT DEEP, just soak.

Add one layer of bisciuts. Add half of the cheese cream over the bisuits.

Sprinkle the cream with the powdered cocoa. Add a second layer of biscuits. wetting them in the coffee.

Cover the second layer with the rest of the cream and sprinkle it with the powdered cocoa. Leave it in the refrigerator 30min at least before serving. Serve cold.
