Some people want a chocolate cake for their birthday, but not Adi's husband. He will always ask for his grandmother's strawberry mousse.
Serve it frozen in the summer or make individual portions in clear serving bowls or wine glasses.
Be creative with the decorations and impress your guests - you can serve it with crashed strawberries or other berries on top. It also goes well and looks nice with crashed kiwis decorating it.
Ingredients- 1/2 kg Strawberry (this is the weight after removing the leaves) - 2 eggs a - Pinch of salt - 1/2 cup sugar + 1/4 cup sugar - 2 tablespoons fresh lemon juice - 250 ml of heavy whipping cream |
Place 2 whole eggs in a Bain-marie (put them in a bowl or a pot over steaming water). Add salt |
and 1/2 cup of sugar. Stir constantly until lukewarm to the touch. Remove from fire. |
Whip the egg mixture and cream until it forms a strong foam. Crush the strawberries in a blender. |
Add 1/4 cup sugar and lemon juice. Gently fold the berries into the cream. |
Mix until incorporated. Mousse can be served cold or frozen. Freeze in a loaf pan for at least 5 hours before serving and slices it or move into individual dishes and refrigerate for at least 5 hours. You can serve with mashed strawberries for decoration. |
