Ingredients- 180g of pumpkin pulp - 100g plain greek yogurt - 2 yolks - 100g of sugar - 30g of butter, melted - 130g of flour - 8g of baking powder - half tea spoon of ground nutmeg - 50g of dark chocolate
For the sauce - 50g of sugar - 1 orange |
Cut the pumpkin pulp in small pieces, wrap them in aluminum foil and cook it in the oven at 200°C (420F) for 30 min. They don't need to cook completely, they need to be soft. Put them in a food processor. |
Smash them and put the pumpkin pulp in a mixer bowl. Let it cool down a bit. Add the greek yogurt and mix. |
Add the sugar and the yolks and mix. Add also the melted butter. |
Mix in a bowl the flour, the baking powder and the nutmeg. Add the flour mixture in the bowl. |
Prepare a cupcake oven tray with some paper cups. Fill 3/4 of each cup with the mixture. |
Bake in the oven at 180°C (350F) for 30 minutes. Let them cool. |
Melt the chocolate in the microwave and spraed some on top of the cupcakes. |
Prepare the orange sauce. In a small pot put the sugar and the juice of a big orange. Save the orange peel and slice it really thin. |
Bring to boil and let it simmer until it gets thick. Spread on top of the cupcakes. |
Let them cool at room temperature. Serve warm. |
