You can make this pie with the jam you like most. The dough is made like a classic pie dough, but the cocoa, the almonds, the lemon and cinnamon make it something really special. You can use the same dough to make biscuits, The spices make it great just by itself.
Ingredients- 400g of flour - 150g Butter (room temperature) - 2 eggs - 120g of sugar - 100g of almonds - 3 tblsoops dark cocoa powder - 1 teaspoon cinnamon - 1 teaspoon of baking powder - peel of half a lemon - powder sugar (to decorate)
Filling- 5 tblspoons of orange jam - nutella as you like :-) |
In a bowl mix all the dried ingredients: flour, cocoa powder, sugar, |
baking soda, grinded almonds (use a food processor until you get the thin powder) |
peel of half a lemon, |
and mix everything. Cut the butter in small pieces and add them in the bowl. |
Start to mix the flour mixture with the butter using your hands, until they form fine crumbs. Then add the eggs and mix everything to form a ball. |
Divide the ball in two half (one bigger than the other). Wrap them and let them rest in the refrigerator for about 30 min. |
Spread some flour on a flat surface and make flat the bigger ball (5-8mm thicker). Leave some border for the pan. Spread some butter in a cake pan (we used 28cm diameter). |
Place the dough in the cake pan leaving a 2 com border. Meke some holes in the bottom of the cake with a fork. Spread the orange jam on the bottom. |
Spread the nutella over the jam. Make flat the second ball of dough. |
With a knife or a zig-zag roll make long and thin stripes. Place them over the nutella, crossed. If you have some leftover of the dough, you can make some biscuits (cook with the cake but no more thn 15min at 180°C (360F)) or you can freeze it. |
Cook in the oven at 180°C (360F) for 45 min. Let the cake cool at room temperature, sprinkle powder sugar on top before to serve. Serve cold. |
