Marzipan is a worldwide know sweet. It's made by almond powder, water and sugar. You can find it in different shapes and colors depending on the countries: in Palermo, Italy, marzipan is usually shaped and painted as friut. In Netherlands and Belgium, marzipan figures are common during Saint Nicholas's Eve. In the Middle East, marzipan usually is flavored with rose-water and shaped into roses and other delicate flowers.

Ingredients

- 250g almonds

- 1/2 cup sugar

- 1/6 cup of water

- half teaspoon of lemon juice

- 3 drops of rose water (you can put vanilla extract or rum extract if you dont have the rose one)

- colors for food (if you want to color it)

If you have the almonds with peel you need to take it out. Boil some water in a small pot. Add the almonds and wait 1-2 min. Strain them and simply press them, the peel will come out easily.

Put the almonds in a bowl with cold water and let them rest for 1 hour.

Add 1/2 cup sugar and 1/6 cup water in a small pot, warm it up at low heat.

Don't boil it! Leave at low heat until the sugar is completely melted. Then add the lemon juice and the rose water.

Strain the almonds and put them in a food procesor. Add the sugar mixture and blend. This process might takes some time. Don't fall in the temptation to add more water! The almonds have to be really powdered. You might need to open your food processor many times, take the mixture down from the border and mix again.

To see if the mixture has a good consistency try to make a small balls rollong some marzipan with a circular movment of your hands, it shouldn't stick to your hands and stay in shape.
To make the double color balls: Make a ball with your hands, cut it in half. Make a smaller ball with the colored marzipan and sqeeze it gently.

Place the colored part in the middle , pressing gently with your fingers. Roll again the ball with your hands.

Now, you can make any shape you want with the marzipan: be creative! You can color it (we colored part purple) and play with colors too. Think of it like you have play-doh, your kids will have fun to make marzipan. Serve cold.
