Turos Delkli are Hungarian cheese buns. They are made with yeast based pastry and filled with sweet cheese and raisins (the filling can also be used to fill Palacsintas (crêpe-like pancake)).
This amazing pastry could make a great breakfast or a yummy addition to your afternoon coffee.
The Turos Delkli originated from the Hungarian Jews and to this day many Jewish families break the Yom Kippur fast with warm Turos Delkli. Think how hard it could be to fast for 25 hours knowing some fresh cheese buns are waiting in your kitchen!
Ingredients-1/4 cup water - 1 spoon dry yeast (8g) - 1/2 teaspoon sugar - 750g flour - 100 g butter, softened - 1 cup warm milk - 3/4 cup sugar - 1/4 teaspoon salt - 1 teaspoon vanilla extract - 2 eggs - 100 ml sour cream
Filling- 500 grams cream cheese (Farmer cheese) - 1 cup sour cream - 1 egg yolk - 1/2 cup sugar - 3/4 cup white raisins - 80g instant vanilla pudding - 1 teaspoon vanilla extract |
In a small bowl mix the yeast, 1/4 cup water and ½ teaspoon sugar. Set aside for 10 minutes until yeast dissolves. |
In a mixer bowl with a dough hook put: 3/4 kg of flour, 3/4 cup sugar, mix a little and add the yeast mixture, |
milk, soft butter, sour cream, |
2 eggs, 1 teaspoon vanilla extract. Blend about 3 minutes. |
Add the 1/4 teaspoon salt and mix until the dough is soft and easy to work with (if the dough is hard add a little milk.) |
Cover the bowl and place in a warm place (in the microwave or oven) for 1 hour, the dough will not double but should rise nicely. |
Prepare the filling: Put the cheese, sour cream and ½ cup sugar in a bowl and mix. Add 1 teaspoon of vanilla extract and powder instant vanilla pudding mix. |
Add raisins and egg yolk and mix until smooth. |
Preparation of the pastry. Lay parchment paper on the work surface and flour it, take 1/3 of the dough and roll out with a rolling pin on the paper to a thin leaf. Cut the dough into squares size 10 cm2, place a heaping teaspoon of the cheese mixture in each square. |
Take two opposite corners of the square and pinch them together. Close the other two corners as well. Place all pastries baking pans lined with parchment paper and let rise for about 1/2 hour. |
Brush them with a beaten egg and bake at 180°C (350F) for about 20 minutes until they are golden brown. |
Let them cool out of the oven and sprinkle with powdered sugar. Serve at room temp or warm. |
