Chocolate Soufflé AKA Chocolate Lavas

Hello! This is a world famous recipe which will be love at first bite if you have not tried yet: Chocolate Souffle AKA Chocolat Lavas!
The version we suggest is made with dark chocolate and cacao powder and it is not a difficult recipe but it requires a good knowledge of your oven. It means that the chocolate souffle are quite easy to prepare but the baking part might be a little tricky. The chocolate souffle are crispy outside but they have a very soft heart of melted chocolate and in order to get it, it is important to bake the souffle not a minute more than what it is needed. In my gas oven, they are ready in 12-13 minutes but this depends totally on your oven and to know it, you just have to practice!
Do not get sad if the souffle won't be as wished the first times you bake them, just keep on practicing and that will do... anyway, they are going to be amazing even without the melting hart :)
The lavas can be frozen for up to 2 months and any time you feel like having one, just put it frozen in a warm oven and... enjoy!

Ingredients

- 150 gr dark chocolate

- 80 gr butter

- 70 gr sugar

- 2 large eggs

- 20 gr flour

- 10 gr cacao powder

- 3 spoons rum

- 8 cupcakes oven cups

Let's start by melting the chocolate together with the butter in the microwave (about 1min at medium heat). Mix it well until it gets homogeneous and let it cool down for a couple of minutes.

In the meantime, put the eggs and the sugar in a bowl and mix them well with a mixer until the mixture gets airy.

Now add the Rhum into the chocolate.

Add now the chocolate mixture little by little and keep mixing with the mixer at low speed.

Finally add the flour and the cacao powder and mix well at low speed for 5 minutes more.

Now place 8-9 muffin paper cups on a cupcake tray and fill it with the mixture (so that they will keep their form).

Freeze them for at least 1 hour before you bake them. Once they are frozen you anc also remove them from the oven tray, put them in a zip bag and store them in the freezer for later.

When you are ready to eat them: Preheat the oven at 180°C (350F) and bake them frozen for 12 to 15 min (no more for sure!)

Enjoy them (maybe with a scoop vanilla ice-cream!) :). Serve warm.
