Ingredients- 200g of flour - 80g amaretti biscuits - 120g butter - 180g of dark chocolate - 4 eggs - 100g sugar - 1 teaspoon of baking powder - 1 or 2 cans of pears - powdered sugar (to decorate) |
Preheat the oven at 180°C (360F). Divide the egg whites from the yolks. |
Whip the egg whites and, when they get soft, add 2-3 tablespoons of sugar (about 50g). Continue to whip for a few more min. |
Melt the chocolate in a small pot with the butter at very low heat, or put a pan with boiling water under your pot. |
In another bowl mix the egg yolks with the rest of the sugar until you get a soft and fluffly mixture. Add the chocolate mixture and mix. |
Using a food processor mince the amaretti biscuits and add them in the bowl. |
Add the flour and the baking powder and mix. |
Add the egg whites and mix gently until they merge. |
Strain the pears from the cans. Spread some butter in a long and short cake pan (use loaf pans or plum cake pan). Add half of the dough to make the first layer of the cake. |
Place the pears on the layer. Cover the pears with the other half of the dough. |
Cook in the oven at 180°C (360F) for 40 min. Let it cool at room temperature before to take out the plum cake from the pan. Spread some powdered sugar on top. |
Serve cold. |
