Ingredients- 200g dark chocolate - 150g butter - 100ml milk - 100g Amaretti - 100g flour - 150g sugar - 4 eggs - 1 can sliced peaches |
Preheat the oven at 180°C (360F). Divide the egg whites from the yolks. |
Whip the egg whites and, when they get soft, add 2-3 tablespoons of sugar (about 50g). Continue to whip for a few more min until they become shiny and foam form. |
In a bowl put: chocolate, butter and milk. Melt everythig in the microwave. |
In a food processor grind the amaretti. Butter a pan and use 1 or 2 tablespoons of amaretti to bread the pan. |
In a mixer bowl put the sugar (about 100g) with the yolks. Whip them until soft and fluffy. Add the chocoalte mixture and mix. |
Slowly add the flour constantly mixing. |
Add half of the whites and mix with a spoon until incorporated. Add the amaretti and mix gently. Add the rest of the whites. |
Pour the mixture in the pan. |
Open the peach can and save the juice. Place the peach slices on top of the cake, add some amaretti if you like. |
Bake in the oven at 180°C (350F) for 45min. The center of the cake should rest a bit wet, so check with a stick the border, if it comes out clean it's ready. Before serving, pour on top of the peaches the juice you saved. |
Serve room temperature or a bit warm. |
