Ingredients- 180g almond (about one cup) - 170g of flour (one and half cup) - 85g of sugar (half cup) - 1 teaspoon baking powder - a pinch of salt - 2 eggs - one handfull dark chocolate chip - 1 teaspoon vanilla extract - 50g butter, melted |
If you have the almonds with the peel you need to peel them. Boil some water in a small pot and turn the oven to 180°C (360F). Add the almonds in the boiling water and wait 1-2 min. Strain them and simply press them, the almond will come out easily from the peel. |
Put the almonds in an oven tray with parchment paper. Toast them for 5 to 10 min at 180°C (360F). Chop the almonds with a knife. |
In a mixing bowl add 2 eggs and half cup of sugar. Beat high speed until fluffy and soft. |
Add the melted butter (let it cool down before to add it). Add one teaspoon of vanilla extract. Mix the flour with one teaspoon of baking powder. |
Add spoon by spoon the flour and then add the almonds. |
Mix and add the chocolate chip. |
Mix everything until the almonds and the chips are well incorporated, eventually add flour to form with your hands 2 logs. Place on a baking paper over a oven tray. |
Bake in the oven at 180C (350F) for 25 min until the logs rise. Place the logs on a cutting board and slice them in slices 1-1,5cm thick. |
Place the slices on the oven tray and bake for 10 minutes at 160C (320F) to let them dry on one side. Flip them and place the try again in the oven. |
Bake for 10 minutes at 160C (320F) to let them dry on the other side. Check them, if youlike them a bit soft they might be ready, if you like them more cruncy turn of the oven and leave them inside for another 10 minutes. |
Serve cold or store them in a tupperware for few days. |
