IngredientsFor the dough:- 300g of flour - 150g Butter (room temperature) - 2 yolks - 120g of sugar - 100g of almonds - 2 tblsoops dark cocoa powder - 1 teaspoon cinnamon - 1 teaspoon of baking powder For filling- orange jam (or your favorite jam) - nutella

In a mixer bowl put the butter (sliced and at room temperature) with flour and mix until incorporated. |
Add sugar. Separete the yolks from the egg whites and add the yolks in the bowl. |
Add cocoa powder and cinnamon. Mix well. |
Make a bowl with your hand and wrap it with plastic paper. Let it rest in the refrigerator for at least 30 minutes. |
When you are ready, unwrap the dough and make it flat with a rolling pin. You might need to sprinkle your working surface and the rolling pin with some flour, so the dough won't attach to them. With cookie cutters make even round shapse and round shapes with an hole. You can make other shapes if you like, of course! |
Place them in a oven tray over baking paper. Bake in the oven at 180C (350F) for about 10 minutes. Even if they look stil soft take them out of the oven, they get harder colling down. |
When the biscuits are cold, fill them with jam. |
Fill with nutella. |
Serve them cold, you can store them for few days in a zip bag or in a tupperware. They are very good for a biscuits plate to bring to a party! Look here the post for some inspiration! |
