Ingredients

- 200g flour

- 75g butter

- 100g sugar

- 1 egg

- 1 teaspoon of baking powder

- lemon peel (better if you can find an organic lemon)

Make about 20-30 pieces.

Prepare the flour mixture: add flour, baking powder and lemon zest in a bowl.

In a mixing bowl put the butter at room temperature with the brown sugar and mix them until creamy.

Add one egg and mix again until creamy.

Add the flour mixture spoon by spoon until incorporated. Scoop the dough from the bowl borders.

Place on a plastic paper sheet and wrap it forming a ball. Let it rest in the refrigerator for at least 30 minutes.

Once the dough il cold, cut it in small pieces and form small balls (2-3cm max diameter) rolling the dought between your hands. Place them in a oven tray over baking paper.

Bake in the oven at 180C (350F) for about 10 minutes. The bottom should be lightly brown.

Let them cool at room temperature and serve them cold.
