Ingredients- 200g flour - 75g butter - 100g sugar - 1 egg - 1 teaspoon of baking powder - lemon peel (better if you can find an organic lemon) Make about 20-30 pieces. |
Prepare the flour mixture: add flour, baking powder and lemon zest in a bowl. |
In a mixing bowl put the butter at room temperature with the brown sugar and mix them until creamy. |
Add one egg and mix again until creamy. |
Add the flour mixture spoon by spoon until incorporated. Scoop the dough from the bowl borders. |
Place on a plastic paper sheet and wrap it forming a ball. Let it rest in the refrigerator for at least 30 minutes. |
Once the dough il cold, cut it in small pieces and form small balls (2-3cm max diameter) rolling the dought between your hands. Place them in a oven tray over baking paper. |
Bake in the oven at 180C (350F) for about 10 minutes. The bottom should be lightly brown. |
Let them cool at room temperature and serve them cold. |
