Palmarola is a small island of the Mediterranean sea strategic positioned for the migration of birds. This cake recipe comes from a woman working at the Bird Observatory of the WWF in the 1974. Fede's mum got the recipe after a visit there long time ago!
Ingredients- 4 apples - 50g raisin - 1 cup of regular flour - 1 cup of whole wheat flour - 1 cup of cane sugar - 1 cup of oil (half oilve oil, half corn oil) - 3 tablespoons of milk - 2 eggs - 1 tablespoon of rum - a pinch of salt - lemon peel - 1 teaspoon of baking powder |
Peel and cut the 4 apples in 8 pieces. Then dice them thin in a bowl. |
Add 2tablespoons of cane sugar and grater some lemon peel. Add the raisins. |
In a small pan or in the microwave warm 1 cup of oil (half oilve oil, half corn oil) with 3 tablespoons of milk. Put them in a bowl with 1 cup of cane sugar and whip it until the sugar is melted. |
Add 1 cup of whole weat flour and mix. |
Divide the yolks from the egg whites (save them for later). Add the yolks, 1 tablespoon of rhum and a pinch of salt to the mixture and mix. |
Add 1 cup of regular flour and mix again. Add 1 teaspoon of baking powder and mix. |
Whip the egg whites until they become a firm foam. |
Add the whites in the mixture gently, mixing by hands with a spoon. Prepare the cake pan. Spread 2 tablespoons of corn oil in your cake pan. |
Add 2 or 3 tablespoons of cane sugar and spread it everywhere in the pan. Add first the mixture on the bottom of the cake pan and on top the apples. |
Cook in the oven at 180°C (360F) for one hour or until the cake mixture is not wet (try to test it with a wood stick). If you are using an electric oven you might need to cook the cake a bit longer. Leave it cool at room temperature. Serve cold. |
