Mochi is a traditional Japanese dessert made of a special sticky rice flour. The simple version of mochi is filled just with sweet red beans paste, we decided to make it even more delicious adding straberries, we are sure you will enjoy it!
The mochi flour is easy to find in Asian/Japanese grocery stores and in some big supermarkets.
Ingredients- 100g Shiratama-ko 白玉粉 (Mochi flour) - 20g sugar - 150ml water - 6-8 strawberries (small size) - 180g cooked sweet red beens - potato starch |
Wash the strawberries and cut the leaves. Divide the red bean paste into 30g balls. Cover a strawberry with red been paste, making a small ball and leaving the top of the strawberry free. |
In a bowl suitable for use in microwave oven, mix Shiratama-ko and sugar. |
Add water and stir until it gets homogeneous. Wrap the bowl with plastic film. Heat it in the microwave oven for 1min at medium-high power. |
Take the plate out from the microwave and stir the mixture well. Cover it again and cook for another min at medium-high power in the microvawe. Again, stir the mixture really well. |
Do this action at least 3 times, till the mochi become smooth and sticky. |
Spread potato starch over a cutting board and place the mochi dough on it. Cut the dough in 6-8 pieces. |
Wet your hands. Flatten out a piece of mochi dough in your hand and place a strawberry in the middle. Wrap the strawberry with the dough, making a small ball. |
Sprinkle the mochi with potato starch to prevent sticking. Serve cold. |
