Here is a good idea of what to do with your overripe banana – the one that is totally black:
there is no butter or heavy cream in these truffles, just coconut milk.
They get their sweetness from a very ripe banana and you cannot taste the coconut in them.
Coat them in your choice of chopped nuts or roll them in powdered sugar so the kids can enjoy them – and they will!
Ingredients- 200 g dark chocolate 60% cocoa solids or more - 1/2 cup coconut milk (NOT coconut water!) - 1/2 cup mashed banana (approximately one large banana) - 2 tablespoons natural peanut butter - powdered sugar - to taste For coating:coco powder, mixed chopped nuts |
Place 200g chopped dark chocolate and coconut milk in a bowl. Heat in the microwave for about 50 seconds until the milk is almost boiling. Leave for a few minutes to allow chocolate to melt. Stir the chocolate and coconut milk until blended. |
Move the chocolate mixture food processor, add the crushed banana and peanut butter and operate until the mixture is smooth and uniform. |
Add powdered sugar if needed. Move to a bowl, cover well and freeze for an hour. Use wet hands or spoon to form balls. |
Roll them in coating of your choice. |
Keep in freezer and enjoy them cold! |
