This recipe can be used either as a great appetizer for 4 people or as a fast and good meal for 2 people. Don't forget the pita bread to scoop the hummus from the plate!
Ingredients- hummus (look the recipe here) - 250g of mushrooms - half onion - italian parsley - paprika, cumin, salt and pepper - olive oil
To eat with: pita bread or soft tacos |
Make hummus.

While the onion is sweating, add paprika, cumin and pepper to taste. |
Wash and cut the mushrooms. Don't cut them too small, in half or 3 pieces, leaving the small ones intact. |
When the onion is soft add the mushrooms in the pan and stir. |
Add the parsley and stir. Cover the pan and let them cook for 5 to 10 min. They should make enough water to not stick on the pan, but check it once or twice and in case add a bit of water. Taste them and add salt according to your taste. |
Once the mushrooms are cooked let them cool for a few min without covering the pot. In a serving bowl place the hummus and add some mushrooms in the center. Add a little bit of olive oil on top. |
Sprinkle some paprika on top to decorate it. Serve warm. |
