Cheese Focaccine

Ingredients

- 250 g tapioca flour

- 250 grated mozzarella

- 200 g queso fresco (cut in little pieces)

- 1 spoon baking powder

- 2 large eggs

- 110 g butter

- 1 pinch of salt

Let's start by turning on the oven at 220°C (430F). Then pour the tapioca flour, the grated mozzarella, the queso fresco (already cut in little pieces), the salt

and the baking powder in a bowl and start mixing everything with a mixer (or with a spoon if you do not have a mixer).

Now melt the butter in the microwave and let it cool off for a couple of minutes. Then add the melted butter to the bowl with the tapioca flour and mix well with the mixer or by hand. Now add the eggs on at the time and continue mixing until it gets homogeneous (it takes about 5 minutes with the mixer and 10 by hand).

Then make little balls (more or less 30 gr per ball) with this mixture and put them on a baking plate covered by baking paper and bake them for 10-15 minutes in the oven at 200°C-220°C.

Serve them warm.
